This diamond shaped traditional Indian sweet is not only a favorite for Diwali, but it is also a favorite in desserts. You can easily prepare this recipe at home. This sweet can be prepared with ingredients available at home like sugar, ghee, cashew nuts and khoya. You can make it at home and customize it as per your taste and preference. Ingredients of Kaju Katli
- 2 cups cashews
- 1 cup sugar
- 1/2 cup water
- 2 tbsp ghee
- 1/2 tsp ground green cardamom
- 500 grams khoya
- For garnishing - edible silver foil
Put cashews in a mixer grinder and grind them till they become powder.
Now sieve the cashew powder through a sieve so that no lumps remain.
In a separate bowl mix sugar and khoya.
Step – 4
Put the sugar-khoya mixture in a pan. Add 1/2 cup water and stir for 5 minutes. Finally, the sugar dissolves and the mixture becomes thick.
Step – 5
Add cardamom powder, ghee and ground cashew nuts to it. Keep stirring continuously to make a paste.
If you want to keep the katli soft then do not cook too much.
Step – 7
Take out the mixture in a big plate or tray. Roll out evenly with the help of a rolling pin. While rolling the katli, keep in mind that it is thick enough.
Now grease it with a spoon of ghee and put edible silver foil on it.
Cut into diamond shape and your cashew katli is ready to be served.
