The Godrej Food Trends Report, which examines India’s culinary landscape, has placed a strong focus on the country’s enduring fondness for baked goods as Christmas and New Year’s celebrations get underway. Previously considered infrequent indulgences, cakes and pastries are now assiduously assimilated into holiday customs, exhibiting the country’s wide range of gastronomic options.

Indians will always have a particular place in their hearts for baked goods since they are becoming more beloved treats. Thus, the innovative contributions of talented bakers have been crucial in changing this sweet category over time.

The Godrej Food Trends Report highlights a trend worth mentioning: home customers are becoming more eager to try baking cakes and pastries in their own kitchens. This change shows a readiness to accept global offers and a desire for experiential culinary learning. Consequently, the range of pastries being made at home has increased, with Indian kitchens now offering a fascinating assortment of regional and global flavors.

The following are some of the culinary trends that are highlighted in the Godrej Food Trends Report 2023, which focuses on Indian pastry and cake trends.

Southeast Asian pastries – Eighty-seven percent of experts agree that bakeries are now a vital part of food environments. There are currently specialized groups of bakers, such as the nanbais in Delhi, Hyderabad, and Lucknow, the poders in Goa, the Parsi and Iranian bakers in Mumbai and Gujarat, and the kandurs in Kashmir. Collectively, these towns provide a wide range of baked products, including regional takes on cakes, pastries, and other baked items.

Turkish and Middle Eastern baked goods: According to 88% of the panel, Middle Eastern-inspired treats like kunefe and baklava are becoming more and more well-liked. But for daring patrons who like delving into complex taste profiles that blend sweetness with umami, spice, and even fermented aromas, there are engaging possibilities to participate in baking classes, take mithai walks, and savor dessert degustation menus.

European pastry and dessert: according to 75% of experts, the baking sector has to prepare for a long and successful period of fast expansion and change. More creativity and development of well-known products from American and European baking traditions will occur.

Particularly after COVID-19, home bakers have been showcasing their inventiveness and incorporating a diverse array of flavors into their baked goods.
